Target Pressure: Beer must be maintained above freezing and below 42°F. in order to maintain proper freshness and carbonation. The chart below gives the target CO2 pressure to be set on the regulator for various temperatures to allow 6 weeks of perfectly carbonated beer. Remember that beer is best stored and served below a 40°F. keg temperature. Never set warm food on top of a keg to cool.

- Is the beer keg internal temperature below 42°F.?
- Is your regulator gauge pressure set at the proper Pressure for the keg temperature?
